Cottage Cheese Salad

Ode to Jello Salad....what, no takers? I love Jello Salads...probably more for the memories than anything else. Jello salads were and often can still be found at church suppers; fruit and jello in molds, topped with whipped cream or a tuna mold festooned with olives.

This simple lime, olive and cottage cheese salad is easy enough to make, adds a pretty colour to the dinner table and goes well with holiday leftovers. For a walk down memory lane I used a recipe from my very worn 'Mennonite Treasury of Recipes' @1962


INGREDIENTS
  • 1 package lime jello
  • 1 cup hot water
  • 1 package cottage cheese (hmmm...I used 1/2 cup...who knows what a package was/is?!)
  • 2 tbsp chopped onion (I used red onion for colour)
  • 2 tbsp chopped carrots
  • 2 tbsp chopped celery
  • 1 tbsp. chopped olives (optional but say yes please )
  • 1 tbsp chopped cucumber (optional)
  • 1/2 cup salad dressing
  • 1/2 cup milk
  • 2 tbsp lemon juice (or vinegar )

Dissolve jello in hot water and lemon juice or vinegar. Chill until partly set. Add all other ingredients. Serve in individual side dishes or leave in a pretty clear glass bowl.
