Ingredients:
1 c raisins
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
2 ½ c flour
1 1/4 c sugar
1 tsp salt
1 tsp soda
1 tsp baking powder
1 ½ c apple sauce
½ c oil
½ c reserved liquid
2 eggs
½ c fresh walnuts
Method:
- Put raisins and spices in a small pot, cover with water and cook for 20 min. Drain
and reserve 1/2 c liquid. - Combine dry ingredients.
- Add applesauce, oil, liquid and eggs, beating two minutes.
- Stir in raisins and nuts.
- Bake in 2 small greased and floured bread pans at 350F for about 45 minutes or until toothpick inserted comes out clean.
