Tomato Bruschetta


I like making this for lunch along side a bowl of homemade soup. You can put the topping on anything but I like it in bagels.

  • !/2 cup of mayonnaise
  • 1 cup of shredded mozzarella cheese
  • 2 tbsp. Parmesan cheese
  • 1/2 tsp. dried basil
  • 2 large tomatoes, seeded and diced
  • pepper to taste
  1. Mix together and spoon on to bagel halves.
  2. Broil at 350 til warmed through and cheese bubbles.
