Just got the last of the carrots dug out of the garden a few days ago..yes they were hiding under the snow and partially frozen ground! Carrots are great, no damage. The crop is plentiful so decided to bake carrot cookies. I don't know where I got this recipe from, years ago I copied it into my recipe binder. These cookies are moist and flavorful. And simple to make! I'm into the 'cookie baking' mood, Christmas must be around the corner!!
Carrot Cookies
1 cup shortening
3/4 cup sugar
1 egg
1 cup cooked mashed carrots
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 cup chopped walnuts
Beat shortening, add sugar and beat until light and fluffy. Add eggs, carrots and vanilla. Beat well. Sift dry ingredients and stir into carrot mixture, mix well. Stir in nuts. Drop by tbsp on baking sheet. Bake 350 for 15 min (recipe calls for 20 min) Ice cookies while warm with orange icing.
Orange Icing
Juice of orange..3 to 4 tbsp
Finely grated rind of 1 orange
1 tbsp butter
1 1/4 cup icing sugar
Mix till spreadable texture. Spread icing on cookies and watch them disappear...really!!
