Raisin Applesauce Loaf

I got this recipe years ago from my friend, Doreen. A very moist loaf that could pass for a cake. Actually quite tasty with a dollop of whipped cream too.

Ingredients:

1 c raisins
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
2 ½ c flour
1 1/4 c sugar
1 tsp salt
1 tsp soda
1 tsp baking powder
1 ½ c apple sauce
½ c oil
½ c reserved liquid
2 eggs
½ c fresh walnuts

Method:

  1. Put raisins and spices in a small pot, cover with water and cook for 20 min. Drain
    and reserve 1/2 c liquid.
  2. Combine dry ingredients.
  3. Add applesauce, oil, liquid and eggs, beating two minutes.
  4. Stir in raisins and nuts.
  5. Bake in 2 small greased and floured bread pans at 350F for about 45 minutes or until toothpick inserted comes out clean.
