
 These fruit and nut filled muffins are a delicious choice for breakfast or snack time.
- 2 1/4 cups white flour
 - 1/2 cup whole wheat flour
 - 1/4 cup quick cooking oatmeal
 - 1 cup sugar
 - 2 tablespoons baking powder
 - 1/2 teaspoon salt
 - 2 eggs
 - 1 apple, cored and coarsely chopped, I left the peel on
 - 2 cups cranberries, coarsely chopped
 - 1/2 cup melted butter
 - 3/4 cup buttermilk
 - 1 cup nuts, chopped
 - Coarse sugar, cinnamon and oatmeal for topping
 
- Whisk together flours, oatmeal, sugar, baking powder and salt in a medium size bowl. Stir in apple, cranberries and nuts. Make a well in the center.
 - In another bowl beat eggs and buttermilk, add melted butter and mix well. 
 - Pour mixture into the well of dry ingredients, mixing just till moistened.
 - Fill two 12 cup greased muffin tins and sprinkle with the coarse sugar, cinnamon and oatmeal.
 - Bake at 400º for 20 to 25 minutes.
 - Yields: 2 dozen muffins
