Thimble Cookies


Another one of those recipes I’ve had and made for so long, I don’t remember where I got it from anymore. I think this one is probably quite popular and readily available with other Christmas cookie recipes, but now we have it here.

Ingredients:
1 cup butter
2 eggs, separated
1/2 cup brown sugar
1/2 tsp salt
2 cups flour
2 tsp baking powder
1 tsp vanilla
chopped nuts (about 2 cups)

Cream butter. Beat in egg yolks, sugar and salt. Add combined dry ingredients. Shape into ball. Divide into quarters. Roll each piece into log and cut into 12 pieces.
Shape into small balls and dip into slightly beaten egg white, then into chopped nuts. Place on parchment paper lined cookie sheet. Press a hole into the center of each ball, using a thimble. Repeat when half baked. Bake at 350F for about 12 - 14 min. When baked, repeat the thimble press. Fill with jam or jelly. We like raspberry or apricot jam.
