Buttermilk 'Soup'

When I was young we used to have a bedtime snack.  Sometimes these 'snacks' were rather like a meal.  These days we would not encourage such habits but for many of our parents it all goes back to those long days on the farm and the necessary 'fuel' they needed to keep going.  Of course, the foods were always tempting too!

Some of the strangest concoctions came out at that time.  I cannot relate this to anything...perhaps it has a Mennonite root somewhere.  But it is interesting to note that after all these years since I've been at home I see this healthy soup/appetizer/snack repeated in other ethnic cooking; tzatziki and  raita to name a few.

Buttermilk Soup

For a single serving .  Boil two eggs.  Chop along with cucumber and green onions (if desired) into bowl.  Pour buttermilk over and top with fresh ground pepper.  This is a very healthy 'soup', is good for digestion and is especially yummy on a hot summer evening.
