Italian Grilled Cheese Sandwich with Sauteed Zucchini


I saw Rachel Ray make something similar to this sandwich. This is my version and it's easy and tasty. I used fresh mozzarella, sliced tomatoes and basil. Any bread that will hold up to soaking in an egg mixture and browned in hot oil is fine. If you want you can cut off the crusts. Layer your ingredients, wet each side with egg mixture and place in hot olive oiled pan.
























When browned on one side flip it over and brown the other side. Rachel Ray served something similar (she used sun-dried tomatoes and cut her bread in circles) and served it with some sauteed zucchini.
























Cut zucchini, drop into pan heated with olive oil. Salt and pepper well. Cut a bunch of scallions and add them to the zucchini. Grate or press a couple cloves of garlic over the zucchini. When the zucchini is done add some grated Parmesan on top. (I think Rachel Ray added some chopped parsley to the dish also).
I'm afraid to hit publish because the preview looked all catty whompus. It this post comes out wrong maybe someone who is a pro with blogger can go in and fix it?
